Zucchini Fritters


Tired of potato fritters? Then you should try these fritters made of zucchini. They are easily made in under 10 minutes. And your kids wont realize that they are eating zucchini :-D


I really just tried this recipe because I had some zucchinis left and no clue what to do with it. I didn't expect much. Especially not out of the microwave. But against all expectations this is really tasty!


As for the dips I enjoy salsa and a sour cream dip mixed with fresh chives. I haven't tried apple sauce because I really think it's a bad match.

  

I did this for my husband without telling him what it was. He thought it was some kid of potato patties and he ate and ate and ate and was satisfied and happy. Then I told him he was eating zucchini and looked at me like O.O - Ha! Psych! :-)

Zucchini Fritters
Ingredients
  • 3/4 zucchini
  • 1 egg
  • 1/2 onion
  • 2 tbsp. flour
  • 1/2 tbsp. breadcrumbs
  • parmesan
  • salt, pepper, olive oil
  • sour cream, chives
Instructions
1. Cut zucchini and onion into small bits and put it into a bowl.2. Add the egg, flour, parmesan and breadcrumbs to the bowl. Add some olive oil and stir well until it’s a homogen mass.3. Season with salt and pepper.4. Add 4 tbsp. of the zucchini mix to a microwaveable container and form a little pancake (make either one zucchini fritter at a time or use more small containers that fit into the microwave all together).5. Put it into the microwave: 800 W / 5 minutes.6. Take the zucchini fritter and flip it around. Put it into the microwave again: 800 W / 2 minutes7. For the dip - mix sour cream and chives.
