This red lentil soup will totally surprise you. It’s so easy to cook and tastes delicious. If you are not into garlic - just leave it out or use garlic powder instead so it doesn't taste that intense. Garlic powder isn’t as strong as fresh garlic cloves.
I am a fan of this soup because there are alot of proteins! Red lentils are super healthy and tasty on top of it! My husband and I are doing a lot of sports and enjoying the gym whenever we can! And sometimes I just cook a huge pot of it for the whole day, it fits perfectly into our nutrition plan for workout days.
Good to know: You can make a big pot of it and put the rest into the fridge. It will be durable for a few days! Sometimes I think it even tastes better after a day when it had time to draw for a few hours.
Red Lentil Soup
Ingredients
- 1 onion
- 3 garlic gloves
- 1/2 bulb fennel
- 2-3 carrots
- 1 1/2 cup red lentils, dry
- 2-3 tsp. curcuma
- 2 tsp. curry
- 1l broth
- 1 can chopped tomatoes
- 1 can coconut milk
- salt, pepper
- lemon juice, olive oil
Instructions
1. Cut onion and garlic cloves into thin bits and heat them in a big pot with some olive oil.2. Cut fennel, carrots and ginger into cubes and add them once the onions and garlic have been in the pot for 2-3 minutes. Season with curcuma, curry, salt and pepper.3. Deglaze the pot of vegetables with 1 litre (4 cups) of broth. Add the red lentils and let it cook for 10 minutes.4. Now add the can of chopped tomatoes and let it cook for another 10 minutes.5. Now blend the soup while carefully pouring in the coconut milk! Add a sqeeze of lemon juice and season again with salt and pepper if needed.
