Veggie Omlette



Need a quick breakfast? No problem if you have a microwave. For having a good day you sometimes need something special to eat when you wake up. This mushroom omlette will put a smile on your face. Don’t like mushrooms? Don’t worry, replace them with anything you like.

When my husband and I moved we didn't have a real kitchen or stove for like 1 month and that basically drove me nuts. I was so sick of bread and cold meals that I started to experiment with the microwave. And it really worked out.

And when my mom asked me to give her some microwave ideas for work, I was totally thrilled to try more and more recipes with only a microwave.

  

I don't know why but I really prefer using the microwave - it feels like alot less work in the early morning, although I know lot of people complain about microwaves as a whole. But for me it works. If it works for you too, I am more than happy to hear how you liked it :-)

Veggie Omlette
Ingredients
  • 3 eggs
  • 2 tsbp. cream
  • butter
  • salt, pepper, nutmeg
  • mushrooms, zucchini, bell pepper
  • grated cheese
Instructions
1. Get a microwaveable container and add some butter.2. Put it into the microwave: 600 W / 1 min.3. Meanwhile, chop zucchini, mushrooms and bell pepper.4. Add veggies to the microwaveable container and put it into the microwave again: 500 W / 1 min.6. Put it into a large microwaveable container and stir carefully. Put it into the microwave for: 600 W / 3 mins.7. Add the veggies to the omlette after 3 minutes, add some grated cheese and put into the microwave again: 600 W / 3 mins.
