Don’t feel like eating meat today?
So do we! That’s why we tried these tasty veggie patties with feta for you!
You can simply tuck it between burger buns or eat them without. Don't make them too big or else they will break apart. Yeah, I have learned the hart way.
If you need them for a party - no worries - I simply sugget to make some tiny balls instead of patties. That way your guest don't necessarily need a plate to eat.
The patties are super delicious with curry and salsa dips. I also tried quark with herbs and I loved it especially as a burger.

Veggie Patties with Feta
Ingredients
- 2 carrots
- 1 zucchini
- 1 onion
- 1 egg
- 60g feta cheese
- 25g flour
- 1/4 tsp. cumin
- 1/2 tsp. poppyseeds
- 1 tsp. curry powder
- 1 tbsp. parsley
- 4 tbsp. olive oil
- breadcrumbs
- salt, pepper
Instructions
1. Peel and shred the carrots, onion and zucchini. Crumble the feta-cheese into thin bits and add it to the carrot-onion-zucchini mass.2. Add the flour, cumin, poppyseeds, curry powder and parsley. 3. Add the egg and 2 tbsp. of oil and stir well! Season with salt and pepper. Add a few tablespoons of panko or breadcrumbs to avoid having a veggie feta mash in your pan.4. Heat a lightly oiled frying pan over medium high heat, add some of the veggie mass and wait until both sides of the patty are evenly browned.
