Sausage Potato Soup


Potato soup just like grandma did it! This soup is perfect if you have a lot of hungry mouths to feed. It also tastes extremely well after reheating it, so make sure to not waste any of this! It is durable for a few days. 
The process is ridiculously simple: Cut ingredients into cubes, cook it and blend! That’s it!

I think I am okay with claiming that this is my dad's favorite dish ever (along with pea soup and roast potatoes), ergo my mum did this alot when I was younger. It was perfect. Not much work for her, but 4 satisfied stomachs! Of course I was the kid who tried to pick out the most sausages <.<

  

As you can see in the pictures above add the sausages at the very end. Because otherwise we couldn't blend the soup :-)

Sausage Potato Soup
Ingredients
  • 4 1/2 cups (1kg) floury potatoes
  • 1 bunch soup veggies (mirepoix, carrots, celeriac, parsley, leek
  • 2 tbsp. broth
  • 6-8 sausages
Instructions
1. Cut the potatoes and the vegetables into cubes, put it into a huge pot and add water until the potatoes and veggies are fully covered.2. Now add the broth and heat the potato-veggie mix until they are done (approx. 20 minutes).3. Then strain off a bit of water (depending on how thick you want the soup to be) and blend the soup.4. Now cut the sausages into slices, add them and season with salt and pepper.
