Spinach Bagels


I am completely in love when it comes to delicious party snacks that you can prepare a night or some hours before the event is starting. That‘s why i wanted to try these spinachbagels. 

And since my husband has a little weird obsession for spinach it seemed like the perfect thing to do for our next party with our friends. I know that not quite everyone is a fan of spinach, so feel free to replace it with something you like, eg. ham cubes or some fresh herbs.

Make sure to grease the bagel pan (you can also use a muffin pan) so you can get them out easily after baking without tearing them apart.I used coocnut oil and it worked perfectly but any other oil or butter should do well.




Since my obsession is Salsa Dips (oh yes, Salsa Dips everywhere please!) I‘d suggest to serve it with that. But sour cream with a pinch of garlic and lemon juice should do it aswell!

Spinach Bagels
Ingredients
  • 500g leaf spinach
  • 100g feta cheese
  • 100g grated cheese
  • 260g flour, all-purpose
  • 2 tsp. baking powder
  • 2 eggs
  • 60ml olive oil
  • 250ml milk
  • salt, pepper, nutmeg
Instructions
1. Prepare spinach according to package instructions.2. Put spinach into a huge bowl. Add flour, eggs, milk, feta and grated cheese. 3. Season with salt, pepper, nutmeg and add the olive oil. Add the baking powder. Stir well!4. Now take the spinach mass and fill up your bagel pan. (Don‘t forget the greasing!)5. Put bagels into the oven: 400°F / 15 minutes.6. If you like you can take the bagels out of the oven and pan after these 15 minutes and sprinkle some grated cheese into the middle of your bagels. Put them back into the oven for another 5-7 minutes until the cheese is melted
