Cottage Cheese Patties


We have tried these Cottage Cheese Patties for lunch today and were totally surprised how easy it is to make them and how wonderfully they taste. 

We ate it for dinner along with salad but when I am thinking about all these veggie fish sticks/fingers I really have to try it with potato mash. 

The original idea was to find a veggie patty recipe for burgers. But then I stumbled across these cottage cheese patties and threw my plans overboard. 


 


You can always leave out the panko breadcrumbs if you prefer a low carb version of this. A curry or salsa dip fits perfectly!

Cottage Cheese Patties
Ingredients
  • 80g flour, all-purpose
  • 200g cottage cheese
  • 100g tomatoes
  • 1 tbsp. oil
  • 1 onion
  • 1 tbsp. each chives, parsley, oregano
  • salt, pepper
  • extra flour, 2 eggs, breadcrumbs
Instructions
1. Cut tomatoes and onion into thin bits.2. Take a kitchen bowl and add the tomatoes, onion, all-purpose flour and the cottage cheese. Stir well.3. Now add herbs of your choice. In this recipe we used chives, parsely and oregano.4. Season with oil, salt and pepper. Stir well.5. Now try to make little patties out of the cottage cheese mix and coat them with (1) flour, then (2) egg and finally (3) breadcrumbs.6. Heat a lightly oiled frying pan over medium high heat, add the patties. Wait until both sides are evenly browned.
