Low Carb Zucchini Pizza


And here we are again with my pizza passion! Never ever give up on pizza anymore! Instead, try this low carb pizza!The crust is made out of zucchini, mozzarella and parmesan and is tasty, too! Yes, you have heard right - no cauliflower this time! Only zucchinis!

Top the pizza with all your favorite ingredients and enjoy this pizza without counting carbs!


The first time I tried this I had some serious problems with the crust. It wasn't crusty at all - not even tight. So I suggest you are making this pizza before you are getting hungry because you will need a certain amount (alot!) of patience. It took me about 40 minutes until the zucchini dough bottom was crusty. So keep that in mind before you are starting.

Low Carb Zucchini Pizza
Ingredients
  • 1 big zucchini
  • 1 pinch salt
  • 1/2 cup grated mozzarella
  • 1/2 cup grated parmesan
  • 1 egg
  • as much as you like ham, tomatoes, fresh basil
Instructions
1. Grate zucchini and season with a pinch of salt. Let it rest for 10 minutes. 2. Now add the egg, grated mozzarella and parmesan to the zucchini grating and stir well.3. Use a kitchen towel to wring out the water out of the zucchini-cheese mass.4. Take a pizza griddle (or use a regular griddle) and make a pizza out of the zucchini-cheese mass.5. Put the pizza into the oven for: 350°F / 20 minutes.6. After 40 minutes, you can top the pizza with whatever you like: e.g. grated cheese, ham, tomatoes and basil.7. Put the pizza into the oven again for additional 10-15 minutes until the pizza crust is crispy
