Chili Cheese Nachos


My husband loves my chili con carne so I am cooking it several times a month. Trust me, no matter how much i am cooking, no matter how big the pot - it always gets emptied. It's also the one-pot I nearly always cook when family or friends are coming over. That basically is the reason why I wanted to "pimp" my chili a little, because eating chili con carne two days in a row might make my husband happy, but not myself. So I simply took a bag of nachos, mixed it with my chili con carne and added alot of grated cheese. The outcome? Just wow.


So you can see in the pictures above and below (and also in the video) that Chili Cheese Nachos are extremely easy to make. If you really don't give a damn about calories I suggest throwing in as much cheese as you can and you will most likely receive what I normally call: foodporn!



Maybe you even have some left-over chili con carne from yesterday? That would be the perfect moment to try something new. I am pretty sure you wont regret it :-) 
As for Dips I really think that a Salsa Dip or Cheese Dip would mix exceedingly well.

Chili Cheese Nachos
Ingredients
  • 100g nachos
  • 500g ground meat
  • 1 can kidney beans
  • 1 can diced tomatoes
  • 1 bell pepper
  • 2 chipi peppers
  • cumin or chili seasoning
  • olive oil
  • salt, pepper
Instructions
1. Heat olive oil in a pan and add the ground meat. When the ground meat is not raw anymore, season with salt and pepper.2. Wash sweet and chilli peppers and cut them into thin bits. Add the peppers and kidney beans to the chili and let it cook for a few minutes.3. Add the diced tomatoes. Let it cook for another 10 minutes. If you feel like your chili is too liquid, strain off some liquid now. Season with approx. 3 tbsp. of cumin or chili seasoning.4. While you wait, start spreading the tortilla chips on your plate. Take enough grated cheese and spead it over the nachos. When the chili is ready, pour some of it over the nachos and cheese.5. Now add more nachos and top it with grated cheese once again. Put the plate into the oven for 325°F / 10 minutes until the cheese has melted.
