Have any mashed potato leftovers again and don‘t know what to do with it? Then I might have a brilliant solution for you! Potato cheese balls are easy to prepare and the best: you don‘t have to eat mashed potatoes for the whole next week.
In case that you do not have any leftovers - don‘t worry. Just make
yourself some fresh potato mash but make sure to season it properly with some butter, milk
and broth.
Otherwise it wont taste any good.
Also, you don‘t have to deep fry and eat them right away. You can
freeze and save them for later right before you coat the balls. Works perfectly for me, especially
if I have enough of all the potatoes for a week or two :-)
These taste delicious with dips. I would recommend a simple
salsa or mayonaise. Sounds like a good plan for the next time you have some leftover
potato mash, doesn‘t it?
Potato Cheese Balls
Ingredients
- 1 little package ham cubes
- leftover mashed potatoes
- 1-2 eggs
- 3 tbsp. chives
- 1 tbsp. garlic powder
- 2 tsp. pepper
Instructions
1. Mix the potato mass and shape little balls just big enough so that you can put some cheese in it later.
Which is what we do now.
Simply take a cheese cube and press it into a potato ball. Make sure you close the balls so that the cheese cannot leak later on.
2. Now coat the potato cheese ball with (1) flour, then toss it into (2) whipped eggs and finally coat it with (3) panko/breadcrumbs.
3. Now your coated potato cheese balls are ready to be deep-fryed.
4. Get out your deep fryer and fry the balls until evenly browned on all sides.
