It’s not always all about potatoes! This recipes proves: polenta fritters are easy and delicious. Just try to find cornmeal in your local supermarket - it pays! Serve the fritters with some mayonnaise. Everyone will love it!
So I did this recipe a while ago - a long while ago - and I cannot remember where I found this recipe nor why I wanted to try it. Probably because I have found polenta in my kitchen cupboard and had no idea what to do with it.
Anyway, I am glad I did it, because that's what I call mouth-watering. I even love how they look - so beautiful. As you can see I have used the same pancake maker as in Banana Pancakes.
You really don't need need a pancake maker. A simple pan is enough. And maybe you are better than me in shaping beautiful pancakes with only a pan. I wont show you my pan-results on here :-D
Polenta Fritters
Ingredients
- 1/3 cups cornflour
- 2 eggs
- 1 1/8 cups flour
- 1 tbsp. salt
- 1 tbsp. baking powder
- 1/2 bunch fresh parsley
- 1 can corn
- 1 1/2 cups water
Instructions
Bring the water to boil and add the cornflour. Stir well until it is a homogen and thick mass.Let the polenta cool down for a few minutes. Then put it into a bowl and add the eggs, the flour, the baking power, the corn and the chopped parsely. Stir well.Now spread some oil in a pan and put approx. 1 tbsp. of the polenta mass into the pan and make little panpakes.Fry for approx. 4-5 minutes until they are evenly browned on both sides.Optional: You can also use a waffle maker.
