Breakfast Muffins


I love it when family or friends are coming over to visit because that means we are going to brunch! That is why I am constantly looking for delicious party food / brunch recipes.

I know probably everyone knows about these Breakfast Muffins - but this blog will never be complete if I don‘t share this recipe with you!

I admit I am not so much of a breakfast-egg-eater. I just love my morning bread too much. So a simple egg wont do it for me. But the whole thing changes when I can use my beloved muffin tray and add some of my favourite ingredients. 


And it also looks pretty nice too, so why not inviting over your best friend and serve these? Do you have any ideas with what else I could fill these muffins? Let me know in the comments :-)

Breakfast Muffins
Ingredients
  • 8 eggs
  • 4 tbsp. cream cheese
  • 200 ml milk
  • salt, pepper, paprika powder
  • grated cheese
  • oil for greasing
Instructions
You can fill your egg muffins with anything you like. We tried it with bell peppers, ham,salami, mushrooms, spinach and even bratwurst.If you are using spinach - please make sure to follow the instruction on the package beforeyou use it.1. Take a bowl. Add eggs, cream cheese and milk and stir well. Season with salt, pepper and paprika powder.2. Now choose your ingredients and cut it into small bits. Grease muffin tray with oil or butter. Now put the chopped ingredients into the muffin tray.3. Add some grated cheese.4. Add he „egg-cream cheese-milk“ mass to each muffin of the tray to fill it up.5. Put the muffin tray into the oven: 325°F / 15-20 minutes.
